Yup, like creamy Mac-n-Cheese sauce with spicy instant ramen noodles. Make this EASY Creamy-Spicy Cheese Sauce using Korean Shin Ramen! It tastes so delicious and gourmet-like that no one will think that it was made with instant ramen! 🌶촉촉한 매운 치즈소스 신라면: 젓가락을 멈출 수 없다! 리얼 치즈로 만든 소스: 고소하고 촉촉한 치즈 소스는 쉽게 만들 수 있습니다. ​

Cheese Sauce 치즈 소스

1.25 to 1.75 Cup 컵 Ramen Boiled Water 라면 삶은물

½ Cup 컵 Shredded Mozzarella Cheese 모짜렐라 치즈

½ Cup 컵 Shredded Mexican Cheese Mix 멕시코 치즈

¼ Cup 컵 Grated Parmesan Cheese 파마산 치즈

1 Slice Canadian Bacon or Crispy Bacon Bits 캐나다 베이컨 또는 바삭한 베이컨 조각

1 Tablespoon 큰술 Minced Red Onion or Shallots 다진 붉은양파 또는 샬롯

1 Tablespoon 큰술 Butter 버터

1 Tablespoon 큰술 White Flour (All-Purpose) 밀가루

1 Teaspoon 작은술 Minced Garlic 다진 마늘

Step One

In a medium size frying pan pan, add 3 cups of water, cover with the lid, set the stove heat to HIGH and bring to boil.

  • 3 Cup 컵 Water 물

With the stove heat remaining at HIGH, add the ramen noodles. (Just the noodles. Save the soup powder packet for later.). Cover with the lid about halfway and let it cook for about 60 - 90 seconds on HIGH heat.

  • 1 Shin Ramen 신라면

About a minute later, shake the noodles around in the water to loosen the noodles. Do this for about 20 seconds or so while the heat remain HIGH. TIP: You want to cook the noodles al dente at this point since we will be adding theses noodles back in the pan with the hot cheese sauce later on.


Then quickly pull the noodles out in to a large bowl or plate. Use a fine mesh strainer to pull out all the crumb pieces of the noodles in the frying pan.


Pick up and toss the noodles to cool down the heat of the noodles. Do this for about 10 to 15 seconds. Then add a drizzle of your favorite oil to the noodles and toss to evenly coat the noodles with the oil. Adding a thin coat of the oil the noodles is to prevent the noodles from sticking together.

Put the noodles to the side while we prep the cheese sauce.


Step Two

Pour the remaining ramen boiled water in the frying pan into a measuring cup. It should yield about 1.75 cup of the ramen boiled water.


Then quickly bring the same frying pan to low heat. Tilt the pan over the stove heat and melt the butter.

  • 1 Tablespoon 큰술 Butter 버터

Once the butter melts, add the flour, and mix well using a spatula while pressing down to break up any lumps.

  • 1 Tablespoon 큰술 White Flour (All-Purpose) 밀가루

Keep the frying pan tilted over the stove. The stove heat remains at LOW. Once the butter and flour mixture is velvety smooth, put the frying pan flat on the stove, and raise the stove heat to MEDIUM. Slowly add the ramen boiled water to the pan, less than 1/2 cup at a time, while whisking the water to incorporate with the butter flour mixture. Add up to 1.25 cups of the water. For a more runny cheese sauce, add up to 1.75 cups of the water.

  • 1.25 to 1.75 Cup 컵 Ramen Boiled Water 라면 삶은물

Once you have whisked the ramen boiled water with the butter flour mixture, add the red onion, garlic, black pepper, and Canadian Bacon strips. Mix well for about 20 to 30 seconds on MEDIUM heat.

  • 1 Tablespoon 큰술 Minced Red Onion or Shallots 다진 붉은양파 또는 샬롯

  • 1 Teaspoon 작은술 Minced Garlic 다진 마늘

  • Optional: 1 Slice Canadian Bacon or Crispy Bacon Bits 캐나다 베이컨 또는 바삭한 베이컨 조각

  • Small pinch of black pepper 후추 작은 꼬집

Then slowly add the cheese into three parts. Don't add all the cheese at once. You want to add the cheese into small amounts so it melts well into the liquid. Remember to use a whisk to add the cheese with the liquid in the pan. The stove heat remains at MEDIUM.

  • ½ Cup 컵 Shredded Mozzarella Cheese 모짜렐라 치즈

  • ½ Cup 컵 Shredded Mexican Cheese Mix 멕시코 치즈

  • ¼ Cup 컵 Grated Parmesan Cheese 파마산 치즈

Once the cheese has melted well with the liquid, it should be a thick gravy consistency. Now, add the ramen soup powder to the cheese sauce and mix well using a whisk. If you prefer a less salty and spicy taste, add less of the soup powder. What about the dehydrated vegetable packet? You can add it if you like, but I prefer not to since we already added our fresh vegetables to the cheese sauce.


Before you add the cooked ramen noodles, toss the noodles again to unstick any clumps of the noodles. Add the noodles to the cheese sauce, mix the sauce with the noodles using a spatula. Be gentle with the noodles. (Stove heat remains at MEDIUM.). Once the noodles are mixed in well with the sauce, transfer to a serving bowl dish immediately. Keeping the noodles in the frying pan, even with the heat off, will continue cooking the noodles, and make them soggy and bloated.


Garnish with some minced scallions and a light sprinkle of roasted sesame seeds. For an extra spicy kick, add a small dusting of GoChuGaRu (Korean red pepper flakes).


Now, as with any instant ramen noodles, you must eat them within minutes of making them. So enjoy with some kimchi on the side, and make sure to have a spoon ready to scoop up the extra cheese sauce on the side of the bowl with the broken noodles pieces, which is my favorite part!
