RECIPE INSTRUCTIONS
Serving Size: 6 - 8 Adults
01:11 Galbi Marinade 갈비양념

In a blender add the following, and blend for 30 to 60 seconds:
125 Grams Fuji Apple 후지 사과
6 Garlic Cloves 마늘
Fresh Ginger 생강 (Size of thumb 엄지손가락만한 크기)
1 Cup Soy Sauce 양조 또는 진간장
¼ Cup Mirim 미림 (For alcohol-free option: Mix equal parts water and fresh lemon juice)
Then pour the marinade liquid into a large storage container, then add the following:
⅓ Cup Brown Sugar 흑설탕
3 Scallions Minced 다진 쪽파
½ Teaspoon Black Pepper 후추
Mix well to dissolve the sugar. Now have a taste. It should taste salty and just slightly sweet. If you prefer a sweeter taste, add more sugar. The marinade liquid will also taste somewhat bitter right now because of the raw taste of the garlic and ginger. This bitterness will all subside as the liquid marinades with the chicken and by the time you grill the chicken, the bitterness will be completely gone!

Butterfly the chicken breast as shown in the video.
1.5 Kilograms (3 ¼ Pounds) Chicken Breast 닭고기 가슴살
Place a sheet of parchment paper on the cutting board, and place the chicken breast to butterfly or spit in half. Then place a sheet of plastic wrap on the butterflied chicken breast. Using the smooth part of the mallet/meat tenderizer, and gently flatten the butterflied chicken breast so the thickness is about the same. You want to make the thickness of the chicken breast about 1/4" thick. Then place the flattened chicken breast in the marinade container. Make sure each chicken breast is fully coated in the marinade.
Wipe the interior wall of the container. Then place a sheet of plastic wrap on the chicken and gently press to release any air bubbles. Cover with the lid.
If you are pressed for time, let the marinated chicken sit on the kitchen counter for 1 hour. BUT marinating the chicken for 48 hours in the fridge is highly recommended, as it will tenderize the meat as it absorbs more of the delicious marinade.

Once you are ready to grill the chicken, take out each chicken piece at a time (gently remove any excess marinate, using your hands) and place on a plate. Let the chicken rest on your kitchen counter for about 10 to 15 minutes, to bring to room temperature.
Using a heavy bottom non-stick frying pan (or a cast iron skillet), preheat on HIGH heat for 1 to 2 minutes. Then add a generous amount of cooking oil to the frying pan.
1.5 Tablespoons 큰술 Cooking Oil
Then place each piece of chicken in the frying pan. Make sure to not overcrowd the pan with too many pieces of chicken. Each chicken piece should have enough room, so it isn't squished. With the stove heat remaining at HIGH, sear the chicken for 2 to 3 minutes OR until there is golden brown sear marks.
Turn over the chicken and let this sear on HIGH heat for 2 to 3 minutes OR until there is golden brown sear marks.
Turn over the chicken again. Turn off the heat, loosely cover with a sheet of foil, and let it rest for 1 to 2 minutes.
Then quickly transfer the grilled chicken to a plate and let it rest for 2 minutes before cutting the chicken. This cooling process ensures that the moisture retracts within the chicken which will make the meat moist and juicy.
TIP: Before you grill the next batch of chicken, make sure to use a clean frying pan. If you continue using the first batch pan, without cleaning the residue, the residue will continue cooking and burn, which will ruin the taste of the next batch.
