DoenJang JjiGae (soybean paste stew) is Korea's ultimate comfort stew, neck-to-neck with Kimchi JjiGae (kimchi stew). Among our non-Korean friends, DoenJang Jjigae is not as well known as Kimchi Jjigae, but in Korean cuisine, DoenJang JjiGae is the pillar of Korea's comfort stews.

Substitute lean pork meat, add clams (in-shell) or seafood

Ingredient Prep
Cut the following ingredients into similar sizes, as shown in the video:
1 Medium Potato, Peeled 감자 (180 Grams )
½ Medium White Onion (120 Grams) 중간 크기 양파
130 Grams Mexican Squash 애호박
You can substitute any squash/zucchinni, but Mexican squash is the tastiest and commonly used in Korean cuisine.
Cut the firm tofu into cubes
225 Grams Firm Tofu 두부 찌개용
Slice the beef into small strips or thin slices
130 Grams Lean Beef or Pork 소고기 또는 돼지고기 (🌱Vegan, omit or substitute with plant based meat)
You can substitute lean pork meat instead of beef or even add clams (in-shell)
Cut the root ends off the mushrooms and separate the clustered oyster mushrooms
50 Grams Oyster Mushrooms 느타리버섯
You can substitute any fresh mushroom of your choice (shitake, crimini mushrooms are great!)
Step One
Preheat your earthenware pot (TtukBaeGhee 뚝배기) on high heat for about 2 minutes. If you don't have TtukBaeGhee, use any heavy bottom pot.
Keep the stove heat at HIGH and add the following ingredients, in ranking order:
1 Tablespoon 큰술 Oil 식용유
Small Potato Chunks: 1 Medium Potato, Peeled 감자 (180 Grams )
2 Pinches Salt 소금 2꼬집
1 Pinch Black Pepper 후추 1꼬집
Once the potato goes in the pot, do not move it around. Leave it as is for a good minute on high heat or until you see that golden mark on one side of the potato.
Then add the beef, salt, and onions. Stir fry on high heat for about 30 seconds or until the beef is cooked just about half way.
Thinly Sliced Beef: 130 Grams Lean Beef or Pork 소고기 또는 돼지고기 (🌱Vegan, omit or substitute with plant based meat)
1 Pinch Salt 소금 1꼬집
Onion Chunks: ½ Medium White Onion (120 Grams) 중간 크기 양파
Step Two
With the stove heat remaining at high, add the following ingredients to the pot, in ranking order:
3 Cups 컵 Hot Water 뜨거운 물
1/3 Cups 컵 된장 Korean Soybean Paste
1/2 Tablespoon 큰술 Minced Garlic 다진 마늘
Cubed Firm Tofu: 225 Grams Firm Tofu 두부 찌개용
TIP: When cooking soups and stews, it is best to add hot water to the pot to keep building on the heat of the ingredients in the pot. If you add cold water to the hot pot, you are taking 2 steps back and now wait for the ingredients in the pot to come back to its high temperature to continue cooking.
Gently mix the ingredients in the pot to break up the soybean paste. Once the liquid starts boiling (active bubbles), then start your timer for 3 minutes. Let it cook on high heat for 3 minutes, with no lid on.
Once 3 minutes of boiling is complete, add the following ingredients (stove heat remains at high):
Cubed Mexican Squash:130 Grams Mexican Squash 애호박
50 Grams Oyster Mushrooms 느타리버섯
Gently press down to soak the squash and mushrooms in the broth. Let is boil on high heat for 1 minute.
Optional Ingredients:
Add the following ingredients and mix well. Then have a quick taste test. DoenJang JjiGae should taste salty so that with warm Korean rice together, it will be perfect! But if too salty, add some hot water. OR if you prefer a saltier taste, add more salt.
1 Pinch GoChuGaRu 고춧가루
1 Teaspoon 작은술 Beef Dashida 소고기 다시다 (🌱Vegan, YonDu 연두)
Alternatively, you can add one of these Dashi bags/capsules in the pot when you add the hot water, if you don't want to use the Beef Dashida or YonDu. Remove and discard the cooked Dashi bag before eating your stew.

Step Three
Garnish with scallions and [optional] fresh red and/or green slices and enjoy!

3 - 4 Slices Fresh Red or Green Pepper (serrano, jalepeno...etc)
DoenJang JjiGae must be enjoyed with warm Korean rice! DoenJang JjiGae is unlike miso soup where you can have the miso soup alone. So Korean rice is a must when you have this stew. You add big spoonfuls of the stew to your warm Korean rice bowl, mix it all up, and enjoy!
