INGREDIENTS
Peeled Potato ź°ģ 440 Grams
1 Scallion, Minced ė¤ģ§ ģŖ½ķ
1/2 Teaspoon ģģģ Salt ģźø
1 Garlic Clove ė§ė
1 Pinch Black Pepper ķģ¶
1 Pinch ź¼¬ģ§ Salt ģźø
1 Tablespoon ķ°ģ Sesame Oil ģ°øźø°ė¦
INSTRUCTIONS
Step One
Cut the potatoes into sticks. The sticks should be not as wide as, but thicker than linguine pasta. Place all the potato sticks into a bowl of cold water.
Step Two
In a medium size pot, fill with more than 1/2 of water, and bring to boil. Once the water comes to boil, add salt and garlic.
1/2 to 1 Teaspoon ģģģ Salt ģźø
1 Garlic Clove ė§ė
Then stain the potato sticks and add to the pot of boiling water. Once the water comes back to boiling, start counting 2 minutes. The stove heat remains HIGH.
2 minutes later, bring the boiling pot to the sink and pour into a strainer. Quickly bring down the temperature of the potato stick by rinsing in cold water. Be gentle to avoid breaking up the potato sticks. At this point, the potato sticks should hold its shape and just slightly firm. Gently toss the cooled down potato sticks to remove any excess water.
Step Three
In a large mixing bowl. add the following ingredients and mix well.
1 Pinch Black Pepper ķģ¶
1 Pinch ź¼¬ģ§ Salt ģźø
1 Tablespoon ķ°ģ Sesame Oil ģ°øźø°ė¦
1 Garlic Clove ė§ė (using a microplane, grate the garlic clove)
Garnish with a sprinkle of sesame seeds
Then add the potato sticks to the mixing bowl. Gently mix the potato sticks with your hands to coat the seasoning. Then have a taste test. If you like it less salty, this should be good. But if you prefer a saltier taste so it balances out when you have it warm Korean rice, add another pinch of salt and mix gently. You can garnish with sesame seeds. Like any salads, it is best to consume this salad within a few days of making. Always store the salad in the fridge.
Now, you can have this potato side dish as salad or as a salty banchan with warm Korean rice. Not all Asian rice are the same, so do enjoy this potato side dish with Korean rice, and of course, kimchi will be perfect!
If you are in a pinch and don't have time to make Korean rice, try this cooked microwavable Korean rice. https://amzn.to/3niflk3
