Garlic Roast 마늘 굽기

90 Grams Garlic Bulbs 통마늘

2 Tablespoons 큰술 Extra Virgin Olive Oil 식용유

2 Pinches Salt 소금 꼬집

1/8 Teaspoon 작은술 Black Pepper 후추


Garlic Sauce 마늘양념장

2 Roasted garlic cloves 구운마늘

¼ Cup 컵 Soy Sauce 간장

1/2 Tablespoon 큰술 Brown Sugar 흑설탕

1 Minced Scallion 다진 쪽파

1/4 Teaspoon 작은술 Fine GoChuGaRu 고운고춧가루

1/8 Teaspoon 작은술 Black Pepper 후추


Stir Frying The Noodles

Cooked 415 Grams Fresh Noodles 생짜장면

Step One

Garlic Roast 마늘 굽기

Cut the tip end of the garlic cloves.

  • 90 Grams or 2 Garlic Bulbs 통마늘

On two sheets of aluminum foil, place the garlic cloves (root end down). Add the following ingredients on the garlic cloves, where the cut is exposed.

  • 2 Tablespoons 큰술 Extra Virgin Olive Oil 식용유

  • 2 Pinches Salt 소금 꼬집

  • 1/8 Teaspoon 작은술 Black Pepper 후추

Then place the tip ends of the garlic clove back on the garlic bulbs.

Loosely wrap the foil so there is air space inside the wrapped foil.

Preheat the oven at 375°F (190°C) 에서 예열

Place the foil wrapped garlic bulbs on the middle rack of the oven, roast for 1 hour.

Rest the roasted garlic foil package for 20 to 30 minutes on your kitchen counter. DO NOT OPEN the foil package. This resting period ensure that the garlic cloves steam in its own temperature as it cools down. When the garlic cloves are done cooling down, it will be easier to squeeze out the garlic.

You can store the roasted garlic in the fridge for a few days, in an airtight container. Bring to room temperature before mashing.


Step Two

Garlic Sauce 마늘양념장

Squeeze the roasted garlic cloves in to a medium mixing bowl. Using both of your hands, start squeezing from the root end of the garlic bulb. Once you are done squeezing out all the garlic cloves, pick out the roasted garlic tips, too. Then remove the garlic skin that might have fallen into the mixing bowl. Using a fork, start mashing the roasted garlic cloves. Now, you might see clump pieces of extra roasted garlic pieces. These are like sweet garlic candy to me😋. Use kitchen shears to chop up these garlic pieces.

Add the following ingredients and mix well.

  • ¼ Cup 컵 Soy Sauce 간장

  • 1/2 Tablespoon 큰술 Brown Sugar 흑설탕

  • 1 Minced Scallion 다진 쪽파

  • 1/4 Teaspoon 작은술 Fine GoChuGaRu 고운고춧가루

  • 1/8 Teaspoon 작은술 Black Pepper 후추

You can prepare this garlic soy sauce mixture a few days in advance and store in the fridge. Bring to room temperature before adding to the frying pan.


Step Three

Cooking The Noodles 쫄깃하게 국수 면 삶는법

TIP #1 Always use a big/bigger pot, rather than a small size pot and cramming in the noodles. If using dried noodles, use a pot that is large enough to completely plunge the noodles into the pot. Trying to cook your dried noodles with the 2nd half sticking out the small pot isn't really ideal because the noodles will not cook evenly, since the 2nd half that is sticking out has to wait to be cooked.

In a large pot, fill half with water and bring to boil.

If using fresh noodles, make sure to air toss the noodles to untangle the noodles, for about 10 - 15 seconds.

Add the noodles to the pot of boiling water, keep the stove heat high, and stir the noodles. Cook the noodles for about 3 minutes (fresh noodles) and perhaps longer for dried noodles OR until al dente. Do not over cook the noodles.

TIP #2 When the boiling water start bubbling to the rim of the pot, lower the stove heat to medium until the bubbling at the rim subsides. Then quickly raise the stove heat to high and repeat, while stirring the noodles.

Taste test one of the noodles to ensure that it is cooked al dente. Dip the noodle in a cup of cold water, then taste test.

Once the noodles are cooked al dente, pour in a strainer in the the kitchen sink. Quickly rinse the noodles under running cold water. This cold water rinsing is to quickly bring down the temperature of the noodles so stops cooking, and remains al dente. Secondly, the cold water rinsing is to rinse off the excess starch because doing so yields to tasty noodles.

Rapidly air toss the cold rinsed noodles in the strainer for about 20 seconds.


Step Four

Stir-Frying The Noodles 국수 볶는 방법

  • Preheat your non-stick frying pan on high heat for 1 to 2 minutes.

  • Add a generous amount of your favorite oil (about 2 Tablespoons 큰술 Extra Virgin Olive Oil 식용유)

  • Quickly add the noodles and spread them evenly on the frying pan. Keep the stove heat high and sear the noodles until it is golden brown (for about 2 minutes). Then move the noodles to one side of the frying pan.

  • Tilt the frying pan. Add the following ingredients to one side of the frying pan (opposite side of the noodles).

    • 1/2 Cup 컵 Hot Water 뜨거운 물

    • 2 Tablespoons 큰술 Extra Virgin Olive Oil 식용유

    • Garlic Sauce 마늘양념장

    • 1/2 Teaspoon 작은술 Beef Dashida 쇠고기 다시다 (optional) or 🌱Vegan YeonDu 연두

    • 1 Tablespoon 큰술 Butter 버터 or 🌱Soy butter

  • With the stove heat remaining high, mix the ingredients above. Once the butter is melted, quickly mix the noodles with the sauce. Stir the noodles around the frying pan so it mops up all the sauce into the noodles.

  • Then quickly drizzle a generous amount of oil (1 to 2 tablespoons) on the noodles, mix it again a few times.

  • Turn off the heat, and quickly transfer the stir fried noodles to a serving plate. TIP #3 If you want your noodles to not get bloated or overcook, immediately transferring to cooked noodles to a serving plate is a MUST. Many people make delicious noodles and pasta, but leave the cooked noodles/pasta in the pot/pan which continues cooking from the heat of the pot/pan, yielding to bloated and overcooked noodles/pasta.

  • Garnish with the following: Minced scallions 다진 쪽파, Fine GoChuGaRu 고운고춧가루, and Crushed Sesame Seed Salt 깨소금
