Today, I'm going to show you make this seasoned ground beef and pork mixture, how to stuffed this seasoned meat on the vegetables listed below, and how to pan fry them to perfection.

To Make Your Own Korean Pancakes Batter Mix
3/4 Cup White Flour
1/4 Cup Sweet White Rice Flour or Potato Flour
1 Tsp Baking Powder
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1/2 Tsp Kosher Salt
Generous amount of cooking oil for pan frying. About 2 tablespoons per pan fry. I prefer to use Extra Virgin Olive Oil, but use your favorite cooking oil of your choice.

Step One
Seasoning The Meat 동그랑땡 양념 만들기
In a large mixing bowl, add the following ingredients and mix well. The seasoned meat mixture should feel dense enough to roll into a shape of a small ball, using your hands. If it feels too wet to shape into a small ball, add some Korean bread crumbs/Panko, mix well again, and do the small ball test again. If the seasoned meat mixture feels too dry and you cannot shape into a small ball, add one more egg (🌱Vegan: add 1 to 2 tablespoons of water), mix well again, and do the small ball test again.
Yes, you must use Extra Firm Tofu for this recipe.
(🌱Vegan: Don't squeeze out the excess water from the 2 lbs of Extra Firm tofu.)
Gently pack down the seasoned meat mixture, cover with a plastic wrap, and store in the fridge for 30 minutes. This 30 minutes of resting in the fridge binds all the ingredients together so you can easily shape them into round patties and stuff it onto the vegetables. Do not go over 30 minutes, doing so will lead to the meat mixture getting watery/wet, as the vegetables added will start releasing its liquid.

OPTIONAL: 1/2 Tablespoon 큰술 Beef Dashida (🌱Vegan: YeonDu Concentrated Flavor Enhancer)
Step Two
Vegetable Prep 야채 준비
(Pick and choose the vegetables of your choice)
Mexican Squash 애호박
Cut in a diagonal angle about 1/2 inch thick. Using a spoon, hallow out just a bit of the soft center, without cutting through completely. This hallowed out bed is where we'll stuff the seasoned meat mixture.
Fresh Crimini or Shitake Mushroom 버섯
Remove the stem
Perilla Leaves 깻잎
Find pairs of the leaves that are similar in size
Spicy Green Pepper 풋고추 & Sweet Bell Peppers 파프리카
Cut the pepper in half, long way. Using a spoon, remove the seeds and inner root end.
Step Three
Soy Sauce Dipping Sauce 양념간장 만들기
Combine the following ingredients and mix well. You can enjoy this dipping sauce right away, or make it a few days in advance (store in the fridge).
1 Tablespoon 큰술 Soy Sauce (All Purpose) 양조간장
1 Tablespoon 큰술 Water 물
1 Tablespoon 큰술 Minced Scallion 다진 쪽파
½ Teaspoon 작은술 GoChuGaRu (Korean Red Pepper Flakes) 고춧가루
½ Teaspoon 작은술 Sesame Seeds 참깨
½ Teaspoon 큰술 Sesame Oil 참기름
Step Four
Dry & Wet Batter 부침 분말 준비
Dry Batter 가루
On a tray or flat platter, mix the following ingredients.
1 Cup 컵 Korean Pancake Powder 부침가루
1 Cup 컵 Korean Tempura Powder 튀김가루
Wet Batter 젖은 부침가루
In a bowl, mix the following ingredients. (🌱Vegan: If needed, add a bit more water to keep the wet batter runny.)
1/2 Cup 컵 Korean Pancake Powder 부침가루
1/2 Cup 컵 Korean Tempura Powder 튀김가루
1 Cup 컵 Water 물
2 Eggs 달걀 (🌱Vegan: Omit)
To Make Your Own Korean Pancakes Batter Mix
3/4 Cup White Flour
1/4 Cup Sweet White Rice Flour or Potato Flour
1 Tsp Baking Powder
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1/2 Tsp Kosher Salt
Step Five
Shaping The Round Meat Patties & Stuffing The Vegetables With Meat
Set up an assembly line in the following order:
Seasoned meat bowl
Tray of dry batter
Bowl of wet batter
Frying pan on stove
Add a large spoonful of the seasoned meat in your hand. Using both hands, roll the meat in your palms to shape it into a small ball. Then gently press between your palms to flatten the ball. Dust both sides of the flattened seasoned meat in the dry batter, and leave on the dry batter tray. Repeat this until you shaped dusted all the flattened seasoned meat.
Lightly dust the vegetable on both sides, shake off any excess dry batter, add the seasoned meat on the hallowed part of the squash, mushrooms, and peppers. Gently pat at down the seasoned meat on the vegetable (remove any excess seasoned meat). Then lightly dust the meat area with the dry batter, and leave on the dry batter tray while you stuff the rest of the vegetables.
For Perilla Leaves 깻잎, stuff with meat as you pan fry them. Lightly dust leaves, and gently rub the leaves together to remove any excess wet batter. Add about 1 tablespoon of the seasoned meat on the center of the dusted leaf. Using the back of the spoon, gently press and spread the seasoned meat. You want to have a think layer of the seasoned meat on the leaf, but leave about 1/2" around the rim of the leaf free of the meat. Add the wet batter around the rim of the leaf. Then put the other dusted leaf on it. Gently pat to "glue" down the two leaves together. Add a thin layer of the wet batter on one side of the glued two leaves. Use the back of the spoon to spread a thin layer of the wet batter. Place in the wet batter side down on the frying pan. (Make sure to follow the steps below to preheat your frying pan.) Then quickly add another tablespoon of the wet batter on leaf facing up. Again, using the back of the spoon spread a thin layer of the wet batter. Pan fry on medium stove heat for 1 to 1.5 minutes or until slightly golden brown. Then flip over and pan fry for 1 to 1.5 minutes or until slightly golden brown. Let it rest on a cooling rack (with a layer of paper towel) for a few minutes before eating.
How To Pan Fry 굽는 방법
Preheat your non-stick frying pan on high stove heat for 1 to 2 minutes. Then lower the stove heat to medium. For Perilla Leaves 깻잎, follow the instructions above.
Add a generous amount of oil (about 2 tablespoons per fry). Take the dusted meat patties or stuffed vegetables, dip it in the wet batter, and add it to the preheated oil frying pan. At medium stove heat, pan fry on both sides for about 3 minutes or lightly golden brown. Then let it rest on a cooling rack (with a layer of paper towel) for 3 to 5 minutes before eating.
TIP: After each fry, take a wet paper towel and wipe the frying clean. If you continue pan frying your second and third fry without cleaning the batter residue, the batter residue will continue cooking and turn black and basically ruin and make your second/third fly full of black specs on it.
Enjoy it with the soy sauce dipping sauce! The vegetable patties are best enjoyed right away (these do not freezer well). For the meat patties, if there are any leftovers, triple wrap them in plastic wrap, then in a freezer bag, and store in the freezer. Eat them within a few weeks. Defrost in the fridge over night and reheat in a toaster oven. Do not refry them again to reheat them. Doing so will make them too oily, ruining the taste of these patties.
