These rice balls are literally On-The-Go simple meals for Koreans. These rice balls are made in many variations with different stuffings and outer layer seasonings as well.
Today, I'm going to show you 3 simple stuffings.

Seasoned Spam ì€íž ìë 볶ì:
Cut the spam into small cubes. Preheat the frying pan on high heat for about a minute. Add the oil, then spam cubes and sauté on high heat for about 2 minutes or until golden brown. Lower the stove heat to low. Tilt your pan and add the soy sauce and brown sugar. Mix well for about a minute or until the sugar is completely dissolved. Transfer the spam to a plate and let it cool down to warm or room temperature.

Seasoned Edamame ìë윩 ìë 볶ì:
Using cooked edamame. Preheat the frying pan on high heat for about a minute. Add the oil, then cooked Edamame and sauté on high heat for about 1 minutes or until slightly golden brown. Lower the stove heat to low. Tilt your pan and add the soy sauce and brown sugar. Mix well for about a minute or until the sugar is completely dissolved. Transfer the spam to a plate and let it cool down to warm or room temperature.

Making The Rice Balls
In a large mixing bowl, add the warm Korean rice, and let it cool down to lukewarm or room temperature. Wear one of those disposable food-safe gloves. OR if you prefer not to, make sure your hands are thoroughly dry. Add a small amount of sesame oil on your glove/palm (less than 1/2 teaspoon). Rub the oil on both palms. Grab a handful of the rice, and create a small size ball. Then press the middle of the rice ball to create is small well, where the stuffing can go in. Add the seasoned spam or edamame in the well you created. Then grab some rice and place on top. Gently pressing with both palms, press to shape into a ball. Then add two pieces of the roasted seaweed on the rice ball and gently press to attach on the rice ball.

For my family, this is one of our favorite simple lunches and dinners. These rice balls are a meal unto itself. It just is SO good, and of course a piece of kimchi with it, makes it a perfect simple meal.
