2 Slices Of Your Favorite Cheeses, enough to cover the entire real-estate of the bread, bring to room temperature (Havarti and Sharp Cheddar Cheeses used in the video) 🌱Thin slices of your favorite plant-based cheeses (tofu gouda and aquafaba mozzarella would be my choice of combination)
(Optional: Hot Tomato Soup garnished with a dollop of creme fraiche, shredded cheddar cheese, cooked mini pieces broccoli heads, and a tiny dollop of Gochujang/Korean red pepper paste)

INSTRUCTIONS
To make the creamy Gochujang paste, mix the gochujang and creme fraiche, gently folding over using a spatula. (If using cream cheese, mix the cream cheese and milk to thin it out, first. Then mix in the Gochujang paste.)
Butter one side of both slices of bread. Using the dull part of your butter-knife, gently scrape off the excess butter. Spread the excess butter around the edge of the sliced bread.
Preheat your griddle or non-stick frying pan on high heat for a minute. Then turn down the heat to medium-low. Place the unbuttered side of the sliced bread down on the griddle pan for five seconds. (This is to warm up the bread so when you add the cheese, it will begin to melt quickly.) Then turn over the sliced bread so the buttered side is facing down. Add the cheese, making sure to cover all of the real-estate of the sliced bread. Then spread the Gochujang cream paste evenly on top of the cheese. (Place the second slice of the bread (the unbuttered side facing down) for five seconds.) Add the second layer of cheese on top of the Gochujang cream paste. Then cover the cheese with the second sliced bread (with the buttered side facing up).
Keep a close eye on the bread. The key here is patience and NOT letting your eyes off the griddle. Depending on your stove firepower, it might take longer or less. It could take one to two minutes or more. So, every 30 seconds, take a quick peek of the sliced bread on the griddle. Once the sliced bread is golden brown, it is ready to be flipped over. Repeat the process until both slices are golden brown. If you want the crunchy toast on the outside and ooey-gooey cheese melt in the middle, it really is just patience and keeping an eye on it. Perfectly grilled cheese cannot be rushed.
Once your grilled cheese is ready, it is best enjoyed immediately. Once the grilled cheese loses its temperature, it will start to get soggy and no longer crunchy...:-/ So, be ready to eat and enjoy in the glory of this ooey-gooey spicy grilled cheese sandwich. And of course, a nice big bowl of hot tomato soup is the best for dunking your perfectly grilled cheese sandwich into...YUM!
