Squash Stir Fry Side Dish 애호박 볶음

애호박 EhHoBak = Korean Zucchini/Squash

볶음 BokEum = Stir Fry

반찬 BanChan = Side Dish

FYI - Here in the states, these Korean zucchini/squash are called Mexican Grey squash. See below for what these zucchini/squash are called in Mexico!


(Zucchini is within the same family as squash. Zucchini is generally green in color. Squash can be both green and yellow in color. )

Serving Size: 2 Adults, as a side dish

280 Grams Mexican Squash 애호박

45 Grams Onion 양파

Optional: 3 Dozen Dried Chili Threads 실고추

1 Tablespoon 큰술 Extra Virgin Olive Oil 식용유

2 Pinches Salt 소금 2꼬집

1 Pinch Black Pepper 후추 1꼬집


Stir-Fry Liquid:

¼ Cup 컵 Water 물

1 Teaspoon 작은술 Minced Garlic 다진마늘

1/2 Teaspoon 작은술 Brown Sugar 흑설탕

1/4 Teaspoon 작은술 SayWooJeot (Salt Fermented Shrimp) 새우젓

Step One

In a small bowl, add the following ingredients and set aside while you prep the vegetables.

  • ¼ Cup 컵 Water 물

  • 1 Teaspoon 작은술 Minced Garlic 다진마늘

  • 1/2 Teaspoon 작은술 Brown Sugar 흑설탕

  • 1/4 Teaspoon 작은술 SayWooJeot (Salt Fermented Shrimp) 새우젓

Step Two

Cut off the ends of the zucchini. Split it long way down the middle. Then slice the zucchini into half moon pieces, about 1/4" thick. If you slice them too thin, it will wilt too quickly and get soggy.

  • 280 Grams Mexican Squash 애호박

Cut the white onion into thin strips, less than 1/4" thick.

  • 45 Grams Onion 양파

Step Three

Preheat your medium size non-stick frying pan on HIGH heat for about 1 to 2 minutes. Add the oil, zucchini slices, salt and pepper. Stir fry on HIGH heat for about 1 minute.

  • 1 Tablespoon 큰술 Extra Virgin Olive Oil 식용유

  • 1 Pinches Salt 소금 1꼬집

  • 1 Pinch Black Pepper 후추 1꼬집

Then add the onion slices and salt, and stir fry quickly on HIGH heat for about 30 seconds.

Step Four

Tilt your pan, and push the vegetables to the upper half of the frying pan. (You can also rest the frying pan handle on a upside down mug, so it tilts without having to hold the handle up while stir frying). Add the stir-fry liquid made earlier to lower part of the pan, that is directly over the stove fire. With the heat remaining at HIGH, melt and braise the liquid on one side of the pan for about 20 to 30 seconds. Then lower the frying pan, and mix the vegetables together for about 10 seconds, on HIGH heat. Turn off the heat, and add the dried chili threads. Mix quickly and transfer the vegetables immediately to a serving plate. IF YOU LET THE VEGETABLES SIT/REST ON THE FRYING PAN, IT WILL GET SOGGY!


Let the zucchini rest for a few minutes, and as the zucchini cools down, it will release its delicious juices from within. And this seasoned zucchini juice is so YUMMY mixed with warm Korean rice! Click here 07:02 to watch How to make a simple and delicious squash bibimbap.
