This Korean Sugar Candy (SeolTang PphobGhee 설탕 뽑기) is an old-school candy that many of we, Korean children, grew up having, before packaged candies became mass produced and made affordable to the general public.
In today's recipe, I'm going to share fail-proof TIPS to make this classic old-school sugar candy at home. YES, I'm going to share TIPS on how to make this WITHOUT using a ladle and how to not have the candy presser stick to the melted sugar (this is a common trouble that many face when making this sugar candy).

This Korean sugar candy became globally popular from the success of the Squid Game drama, which makes me so proud! I do want to share with everyone a brief overview of the differences between Dalgona and Sugar Candy, its history, and unique regional names of this sugar candy.

Sugar Candy Recipe Ingredients
(1 candy - approximately 3" diameter)
Original Sugar Candy/설탕 뽑기:
2 Tablespoon 큰술 Granulated Sugar
1 Tablespoon 큰술 Granulated Sugar (For Dusting Only)
Less than 1/8 Teaspoon 미만 작은술 (0.4 grams) Baking Soda
Peanut Crumb Sugar Candy/땅콩 설탕 뽑기:
2 Tablespoon 큰술 Granulated Sugar
2 Tablespoon 큰술 Peanut Crumbs
1 Tablespoon 큰술 Granulated Sugar (For Dusting Only)
Less than 1/8 Teaspoon 작은술 (0.4 grams) Baking Soda
Tools Needed
1 heavy bottom frying pan
1 disposable wooden chopstick (only for lollipop sugar candy)

⚠️Please be careful when handling the melted sugar⚠️
Step 1
On a cool surface (stone or tile counter top), pour 1 tablespoon of granulated sugar. Use the hotteok presser and spread the sugar evenly (wider than 4" diameter where you'll pour and press-shape the melted sugar candy). Gather the excess sugar to the side, so you can lubricate the hotteok presser again, right before you press-shape the melted candy.
(Peanut Crumb Sugar Candy/땅콩 설탕 뽑기 레시피: On top of the evenly spread sugar, spread 1 tablespoon of the peanut crumbs, in approximately 3" diameter.)
Step 2
Set the stove heat to medium. Using a heavy bottom pan, tilt the pan at an angle, directly over the fire (as shown @2:28 in the recipe video above). Add 2 tablespoons of the granulated sugar. Be patient and wait for the sugar to melt slowly, until you see a golden color around the rim of the white sugar. Using the wooden chopstick, stir rigorously and continuously until the sugar is completely melted.
Step 3
Then quickly, using the tip of the 1 wooden chopstick, pick up as much baking soda as possible (Less than 1/8 Teaspoon 미만 작은술 0.4 grams Baking Soda). Add to the melted sugar, and stir rigorously until the white color of the baking soda disappears (in less than 5 seconds). Then take it off the heat (or turn off the stove heat), and continue to stir rigorously for less than 10 seconds.
Step 4
Then quickly, pour the melted sugar on the layer of sugar, using the heat-safe silicone spatula. Wait 5 seconds for the melted sugar to settle. Meanwhile, rub the hotteok presser on the excess sugar on the counter top, to lubricate the hotteok presser with sugar.
TIP: Lubricate the hotteok presser with sugar before you press-shape the melted sugar is CRITICAL and ensure that the hotteok presser does not stick to the melted sugar.
(🍭막대 설탕 뽑기 만들기/If you want to make lollipop Sugar Candy, place 1 chopstick in the center with 2/3 of the chopstick on the melted sugar pour. Then follow the instructions below.)
(🥜Peanut Crumb Sugar Candy/땅콩 설탕 뽑기 만들기: Spread 1 tablespoon of the peanut crumbs on the melted sugar pour. Make sure to ALSO first spread 1 tablespoon of the peanut crumbs on top of the evenly spread sugar, in approximately 3" diameter, as instructed in Step 1 above.)
Step 5
Gently press the hotteok presser on the melted sugar for 5 seconds. Gently turn the hotteok presser to your left or right as you pull the hotteok presser off the melted sugar.
If you want to add a cookie cutter shape, place your cookie cutter/mold on the candy, and tap it lightly. Then take the cookie cutter/mold off quickly.
Let the press-shaped sugar candy rest and cool down for at least 10 seconds before you pick it up. Use the baker's scraper to pick up the sugar candy. (For lollipop sugar candy, let it rest and cool down for at least 30 seconds before you pick up.)
🥜Rolled Up Peanut Crumb Sugar Candy Stick Instruction/롤 땅콩 설탕 뽑기 만들기
Follow the above Steps 1, 2, 3 and 4. In Step 4, while the melted sugar pour is resting for 5 seconds, place the 1 chopstick on the right side of the melted sugar pour (about 2/3 right side of the melted sugar pour circle). Using the baker's scraper, pick up the melted sugar pour circle (on the closer and parallel side of the chopstick) and gently fold over the chopstick. Then wait 10 seconds. Using the baker's scraper, fold over the soft melted sugar again, and tap lightly to hold the 2/3 rolled up shape. Wait to seconds again. Using the baker's scraper, fold over one more time so the soft sugar is now rolled up completely around the chopstick. You can also use your hands to gently finish shaping the rolled up sugar candy. Let the rolled up sugar candy rest and cool down for at least 30 seconds before picking it up. ☕️For a sweet and nutty black coffee, dip this rolled up sugar candy in your black coffee and enjoy!
Sugar Candy Storage TIP/설탕 뽑기 보관 꿀팁
These sugar candies will start softening after 5 to 8 hours later at room temperature. Once the sugar candy cools down, wrap it in plastic wrap, place it on a flat surface to protect the sugar candy, then bag it in a freezer bag so the candy does not absorb the smell of other foods in the freezer. Store in the freezer until you are ready to eat your Korean Sugar Candy.
