When it comes to desserts during the hot summer months, BingSu 빙수 is the most popular summer dessert for Koreans. BingSu is shavings of ice topped with a variety of toppings. Today, we are making Watermelon BingSu 수박빙수. I'm going to show you how to make this without an ice shaving machine!

1/4 Teaspoon 작은 술 Vanilla Extract 바닐라 추출물 (optional ingredient)

Recipe Instructions 수박빙수 만들기
Step One
Slice off the end of the watermelon, so that it can stand flat. Then cut the watermelon in half, parallel to the flat bottom. Scoop out the watermelon using melon scooper or a tablespoon. Alternatively, use a butterknife to score the watermelon and then use a spoon to scrap out the watermelon. Place the watermelon pieces in a bowl. You can now freeze the hallowed out watermelon shell and use it as a frozen watermelon bowl for you BingSu.
Step Two
In a blender, add the following ingredients and puree for 30 second or until smooth.
1/2 Cup 컵 Water 물
1/2 Cup 컵 Whole Milk 우유 (🌱Vegan: Rice or Oak Milk)
1 Scoop Vanilla Ice Cream 바닐라 아이스크림 한 스쿱
1/4 Teaspoon 작은 술 Vanilla Extract 바닐라 추출물 (optional ingredient)
Remove the inner lid of the blender cover, and cover the hole with a wet paper towel. Place your hand over the paper towel, and turn on the blender again. Then slowly add one ice cube at a time.
1 Cup 컵 Ice 얼음
Step Three
Pour the blended mixture into a freezer bag. Make sure to let out any trap air, and seal in the bag. Lay the freezer bag on a small tray, and fold over the extra flap of the bag. Place the liquid bag tray in the freezer. Let it freeze for 20 to 30 minutes or until it turns crispy slush. (Time will vary according to power of your freezer).
Once ready, make sure press the ice slush bag with your finger and it has that nice crunchy slush sound. If there are parts of the bag that are frozen solid, use a rolling pins to gently break it up.
Pick up the slush bag by the bottom corner and cut the corner off with scissors.
Dressing Up Your Watermelon BingSu
This part needs to be done fast since the ice slush melts fast.
Using the frozen watermelon bowl, add the watermelon pieces back in the bowl. Then add a big scoop of vanilla ice cream. Pour out the ice slush from the cut corner of the slush bag on top of the ice cream and the watermelon. Pat down the ice slush and make a mountain-like shape. Place one pretty piece of the watermelon on top, and garnish with a small sprig of fresh peppermint. Then sprinkle red sugar sprinkles. As the sprinkles melts, it will create a bright pink color on your ice slush. Eat it quickly with your loved ones! And, don't forget to have a straw handy, cuz the best part (at least for me) is sipping on the melted ice cream with the ice slush mixed in with the fresh watermelon juice.
